What. The. Heck. Altitude.

It messes up everything! (Just wait until you see the Oatmeal Cream Pie recipe. *glares at the mountains*)

Not going to lie, the Copycat Cosmic Brownies threw me for a loop.

I mean, the best things in life always do.

Picture it: it’s a blustery Colorado day. Evening has fallen. Kiddos are sleeping. The wind is gusting against the house with brutal force. From the kitchen comes the scent of creamed cacao and butter. Overhead, my twinkle lights sparkle and husband salivates while the ganache melts on the stovetop.

Let’s just say that I learned a lot about the effects of altitude on baking and the importance of following a recipe to what it says.

Srsly tho. Baking can be hard!

Which roughly means not eating the dough and actually cooking it is the hardest part. #justsayin

I ended up doing two different batches of these because the first turned out quite thick. That’s what happens when you use the wrong size of pan. Which I did.

By several inches.

That posed a big problem in cooking time, so the edges kind of burned and the middle as gooey, but still delicious. I bought the right sized pan and did it again—much easier. Also, the ganache called for semisweet and I used dark chocolate chips.

Never thought I’d say this but whoa. Too much. WAY too much dark. Delicious, but too much.

In the end, they were scrumptious, fudgy, and really easy to assemble.

To be honest, though, I really have to be in the mood for ganache, so with the second batch, I did half ganache and half buttercream frosting. Both were delicious.

I mean, c’mon. Can you go wrong with butter and sugar? #Isaynay

All in all, fantastic recipe. Fulfills it’s hopes of mimicking Cosmic Brownies (but is better, in my opinion, and less dry than the store bought.)

This, my friends, is one recipe you are definitely missing out on.
